POLENTA SAUSAGE BRAKFAST WITH HOME MADE BEANS

INGREDIENTS
60ml olive oil
1/2 onion diced
4 cloves garlic finely chopped
2 Tbsp white miso
4 tomatoes very finely diced
2 Tbsp tomato paste
1/2 Tbsp brown sugar
1 Tbsp balsamic vinegar
1 clove 2 x 400g can cannellini beans pinch of ground black pepper
1 pkt of Suzy Spoon’s Polenta, Sundried Tomato & Basil Sausages
Heat the oil in a small saucepan over a medium heat.
Add the onion & sauté for 2-3 mins.
Add garlic & sauté for 30 secs, being careful not to burn.
Add the miso & 250ml of water & stir.
Add the tomatoes, tomato paste, sugar, vinegar, garlic & mix well.
Add pepper and beans and cook for 20 mins
WHILE THAT’S COOKING YOU CAN COOK THE SAUSAGES & SPINACH.
SPINACH
1 Tbsp olive oil 2 cloves garlic 1 bunch spinach pinch of salt & pepper
Heat the olive oil in a saucepan over medium heat. Sauté the garlic for 30 secs, add the spinach to the saucepan and cover; allow to cook 5 minutes. Stir in the salt & pepper and cover again for another 5 minutes; remove from heat.
In a medium pan heat a Tbsp of olive oil. Add your sausages and cook until brown all over and hot all the way through.
